Sticking with my fall obsessed posts lately, I had to add this apple dip recipe. We eat apples everyday in our house. As they say, ” An apple a day keeps the doctor away.” Not sure I should be the one to claim that as I did have a stroke this year while 8 months pregnant. The doctors did not stay away this year. Yet, I do believe in the health benefits of apples. Since they are so healthy, here’s a very unhealthy but amazingly perfect accompaniment to a large bowl of crisp fall apples. I made this for a party this year and also had it at a few people’s houses too. Maybe everyone already has this recipe and I was late to there game, but I suggest trying it this season. Even if you cook for the pickiest of eaters, I bet you can get them to eat apples with this dip.
3/4 cup brown sugar
1/4 cup white sugar
1 tsp. vanilla
8 oz. cream cheese, at room temperature
1/4 cup peanuts, chopped (optional)
In a large bowl, use an electric mixer to mix both sugars and cream cheese. Add vanilla and beat until creamy. If using, add peanuts and stir to combine. Keep covered and store in the refrigerator until reading to serve. I like to serve the dip with honey crisp slices.
