I lived in Nicaragua for 5 months as we completed the adoption our first daughter Maya. While it was challenging at times, I grew to appreciate and love many things about the country. In particular I miss the amazing fruit. I bought fresh fruit everyday from the woman on the street corner and the pineapple is unlike anything I have had in the states. It is sweeter and somehow smoother than it is here. One of my favorite smoothies in Granada was from the Garden Cafe which had Lime, Pineapple, and Coconut. I would often plan my daily outings around being near to the cafe to stop in for the addicting treat. I made a cocktail to mimic this smoothie. Though it will never taste as pure and amazing as that smoothie, I think you will enjoy this fruity (and spiked!) drink. A little rum always makes things better.
Lime Pineapple Coconut Cocktail
1/4 cup fresh lime juice
1 cup frozen pineapple
1/4 cup sweetened shredded coconut
1/4 cup half and half
1/2 cup whole milk
1 shot Rum (preferably Nicaraguan Flor de Cana)
Place all ingredients except Rum in a blender and blend on high until smooth. Place a sieve over a bowl and push the mixture through the mesh to create a smooth mixture, free of coconut bits. Slowly pour the rum into the smooth mixture in the bowl and stir until combined. Pour into a glass. Serve cold with pineapple garnish. For kiddies just leave out the rum. Makes about one cup which is enough for 1-2 drinks depending on who is drinking.
