I have to post this recipe because it’s one you can put together in 15 minutes, make a day in advance, and buy all the ingredients well in advance. These three components mean it’s a mom friendly recipe when you have little time to do anything! I made chocolate eclair dessert this weekend for a friend who had her second baby. I made an extra pan for us, and ended up leaving a fork in the pan and stealing bites from my fridge every time I walked by. I know that is not a good habit but I have already divulged that I am a chocolate addict. You’ve got to try this dessert. It feeds a crowd and is always a crowd pleaser.
Chocolate Eclair Dessert
2 packages french vanilla instant pudding
1 container (8 oz.) cool whip, softened
3 cups cold milk
about 24 graham crackers
1 container chocolate frosting
1. Combine the pudding and milk in a large bowl. Whisk about 2 minutes until thick. Fold in softened cool whip until smooth. Layer the bottom of a 9 by 13 pan with graham crackers. Pour in half of the pudding mixture.Top with another layer of graham crackers. Pour remaining pudding mixture on top. Finish with one more layer of graham crackers.
2. Evenly spread the chocolate frosting over the graham crackers until dessert is fully covered. Put in the refrigerator and allow to chill about 24 hours or overnight.
