I’ve been meaning to post this recipe for a while because it is always a crowd pleaser among kids and adults alike. My mom made this at our Christmas dinner to serve along steak and pomegranate salad. Using frozen hash browns makes this an easy side dish to pair with chicken or steak. I rarely eat potatoes during a meal unless they are french fries but when I do, I like to make this dish. Your kids will devour the potatoes because it they are creamy, cheesy, and free from spice. Potatoes Kids Love (And Adults too!)
32 oz. pkg. frozen hash browns, thawed
10 1/2 oz. can cream of chicken soup
1 cup sour cream
2 cups shredded cheddar cheese
3/4 cups butter, melted
1/2 tsp. salt
1/2 tsp. pepper
1 small onion, finely diced
2 cups crushed corn flakes
Directions: Preheat oven to 350. Grease a 9 by 13 glass casserole dish. Combine all ingredients (except corn flakes and 1/4 cup butter) and place in casserole. Melt the 1/4 cup reserved butter and mix with crushed corn flakes. Top potato mixture with cornflakes. Bake uncovered for 45 to 60 minutes.
