Valentine’s Day is next Saturday! Last year on Valentine’s Day I had a stoke when I was eight months pregnant. That categorizes 2014 as the worst Valentine’s Day ever. This week when I was cleaning out the guest room closet I found an empty card I was supposed to give my husband last year. Sad! This year to celebrate being alive and well, he is taking me to California for the week and I am hoping it will be nothing like last year! The approaching holiday got me thinking about what I like the most which is chocolate. I decided to jazz up a simple brownie mix with extra chocolate chips, a homemade glaze, a heart shaped cut out, and festive sprinkles. Suddenly everyday brownies became adorable festive treats. Isaac said they are the best brownies he has ever had, so I decided I should post them. Happy Valentine’s Day!
“Be Mine” Valentine Fudgy Brownies
eggs, vegetable oil, and water (according to your brownie package directions)
1 cup semi sweet chocolate chips
For the glaze:
6 oz. semi-sweet chocolate chips
1/4 cup heavy whipping cream
1 tsp. vanilla extract
heart shaped cookie cutter
Directions: Mix brownie mix according to the package directions with specified amount of vegetable oil, water, and eggs. When mixed, add in one cup of chocolate chips. Pour batter into a buttered and floured baking dish. Bake according to the package. Let brownies cool.
In a double boiler, add in 6 oz. chocolate chips and heavy cream. Stir with a wooden spoon over medium low heat until the chocolate chips are melted. Turn off the heat and add in vanilla. Pour glaze over the brownies and let cool. Sprinkle with sprinkles and put in the refrigerator to cool.
Before serving, take brownies out of the refrigerator and cut out heart shapes. Serve cool or at room temperature. These brownies are also great accompanied by strawberries or ice cream. Makes about 8-10 brownies depending on how much you sample while cutting out heart shapes. In my case, I got 9 brownies!
