Jenny’s Peanut Butter Cookies

This is a cookie recipe that you need to have near by and accessible at all times. Good thing it’s now on my website! They are the perfect combination of salty and sweet and the dough is addicting (although I shouldn’t recommend eating it because it has raw eggs). That has never stopped me from stealing a few bites of dough. My dad, otherwise known on Katie’s Kitchen counter as Francesco, loves this recipe and my sister always bakes them for him on his birthday. Let me tell you that Francesco has had A LOT of birthdays. Hope you enjoy these cookies as much as my family does. Enjoy!

Ingredients:

1 cup softened butter
1 cup crunchy peanut butter
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp. vanilla
3 cups flour
1 tsp. baking powder
1 1/2 tsp. baking soda
1/2 tsp. salt
1 cup peanut butter chips
1/2 cups crushed pecans
1 cup crushed peanuts

Directions:

Preheat oven to 350. Combine first 4 ingredients in a mixer. Add eggs and vanilla. Mix until blended. Add dry ingredients.  Mix well. Stir in chips and nuts. Bake for 10 to 12 minutes.Makes about three dozen small cookies.

I like to use a small cookie scoop so the cookies are all the same size and are easy to eat in just a few bites.

Sweet and salty. Crunchy and chewy. Fresh from the oven and ready to eat!

    Confused regarding Francesco/Father deal. All I know is that Francesco guy is always spot on and honest. Hope you haven’t driven him away. He’s the main reason I read this blog. BTW these peanut butter cookies do look tasty…….hope to try them sometime.
