I made this refreshing (and healthy) salad this week for a good friend who eats gluten free. Quinoa is a great alternative to pasta and rice if you are trying to cut back on gluten. It is actually a seed and not a grain. Plus it is a pure protein meaning it has all 9 essential amino acids necessary for your body. Ok, off my soap box about quinoa. This salad has bright colors, flavors, and even the pickiest of husbands will gladly eat this. You can serve it right from the fridge or let it sit at room temperature.
Quinoa fruit salad with honey lime dressing-Gluten free!
1 cup Red Quinoa
2 cups water or vegetable stock
Pinch of salt
For the Honey Lime Dressing:
Juice of 1 large lime
Zest of one lime
3 tablespoons honey
pinch of salt
2 tablespoons finely chopped fresh mint
For the fruit:
1 1/2 cups blueberries
1 1/2 cups sliced strawberries
1 1/2 cups chopped mango
3-4 oz. of fresh pomegranate seeds
Extra chopped mint, for garnish
Cook the quinoa: Rinse one cup of dry quinoa under water. Pour into a saucepan with 2 cups water. Bring to a boil. Add a pinch of salt and place the top on the saucepan. Reduce heat to a simmer and cook about 15 minutes. Fluff the quinoa with a fork and let it sit for at least ten minutes to cool down.
Make the dressing: Combine zest, juice, honey, salt, and chopped mint into a bowl and whisk until combined.
Assemble: Add the chopped fruit and quinoa into a large bowl. Drizzle on the dressing and mix to combine. Add more chopped mint for garnish if you desire. Serve or leave in the refrigerator until ready to serve.
