Summer Grilled Shrimp

Oh Hey! It’s been two years since my last blog post! I have a 2 year old, Harrison Heath, who has really put a damper on my free time the last few years. All that to say, I have been getting requests to start up the blog again so I’ve decided there is no time like the present to begin again. I hosted a dinner last night for a friend moving away. It was a potluck themed dinner so I provided the main dish and drinks and then everyone brought part of the dinner to share. I made grilled shrimp, grilled chicken, and a big pitcher of mojitos.

This shrimp is my go to shrimp recipe. It is easy, delicious, and the ultimate summer dish to pass around the table. I hope you enjoy and cheers to 2019 and having three kids over the age of 2. Feels like a milestone to me!

Summer Grilled Shrimp

Ingredients:

2 lbs shrimp – Jumbo or large shrimp, peeled and deveined
1/2 c. olive oil
1 cup chopped basil
4 cloves garlic – chopped fine
2 T white wine vinegar
1 T Worcestershire Sauce – maybe a little more
2 tsp. hot pepper sauce – I have used Siracha recently
1.5 tsp. salt
3/4 tsp. pepper
Directions:
Mix all the ingredients except shrimp in a large bowl. Take 1/4 cup of the marinade out of the bowl to reserve. Place raw shrimp into the rest of the marinade. Let shrimp sit in the fridge to marinatefor about 2 hours but 30 minutes if you are pressed for time.  Heat a grill to medium high. Oil grill. Place shrimp on the grill and grill about 2 minutes per side. Remove cooked shrimp onto a large platter. Pour reserved marinade over the shrimp and toss. Serve.
