You may think Italian cooking when you think of Giada de Laurentiis. Or, maybe if you are a male you think of something else……anyway, she has several kid friendly recipes that I have adopted over the years. This is a simple smoothie recipe I save for a special treat for my kids. It has simple syrup and a touch of vanilla so it’s a mix between a smoothie and a dessert! It blends into a gorgeous pink, well raspberry, color and tastes as good as it looks. This recipe comes from her Giada at Home cookbook which I highly recommend. It has family friendly meals I make over and over. Gotta hand it to her-after having a baby if I looked that good, I may wear tight v-necks while I cook too.
Giada’s Raspberry Vanilla Smoothie
1/2 cup sugar
1/2 cup water
1 cup plain Greek yogurt
1 cup frozen raspberries
1/2 cup apple juice
1 teaspoon vanilla extract
2 cups ice
In a small saucepan, bring the sugar and water to a boil over medium-high heat. Simmer, stirring occasionally, until the sugar has dissolved, about 5 minutes. Cool for 20 minutes.
Pour the cooled syrup into a blender. Add the yogurt, raspberries, apple juice, vanilla, and ice. Blend until the mixture is smooth and thick.
Pour into glasses and serve. Makes four.

*I used vanilla yogurt and that tastes perfectly fine if you don’t have plain Greek.
*I use fresh or frozen raspberries depending on what I have on hand. The ice ensures the smoothie is cold.
