Grilled Steak Salad

My dad is doing this diet where you eat 5oo calories one day and then eat normal the  next day and then alternate  back and forth. He is always trying to loose those few extra L Bs. Whatever happened to healthy eating everyday Franko? To his credit, he HAS lost a significant amount of weight but I will say it’s a bit annoying to be around during his “fast day” especially when I’m in the mood to cook and eat.  Well even a man who starves himself was able to indulge in this steak salad last night because it is full of vegetables, tossed with a healthy vinaigrette, and topped with just a few pieces of thinly sliced steak. I will continue to eat everyday and go on with my “pant fit test” until it fails me. If my pants feels tight, I eat less for a few days. If they are too lose, then I’m probably just depressed or sick because they are RARELY too loose! As long as they fit, I know I’m ok! Enjoy this summer salad as you head out doors to grill this season!

Ingredients:

1/2 cup red wine vinegar
Juice from one lemon
2 tsp. honey
2 tsp. salt, plus extra for seasoning the steak
1 Tbsp. dried oregano
1 cup extra-virgin olive oil
Freshly ground black pepper
1 lb. skirt or flank steak- I prefer skirt steak because it is thiner
6 cups romaine lettuce
4 cups baby arugula
12 cherry tomatoes, halved
1/2 red onion, thinly sliced
4 oz. Blue Cheese, coarsely crumbled

Directions:

1.Prepare the vinaigrette by combining the vinegar, lemon juice, honey, 2 tsp. salt, and the oregano in a medium bowl. Whisk in the cup of olive oil in a thin, steady stream. Season to taste with pepper and set aside.
2.Season the steak with some salt and pepper and drizzle each side with vegetable oil. Grill on high heat until desired doneness about 4 minutes per side for medium rare. Transfer the steak to a cutting board to rest while you make the salad.
3.Combine the lettuce and arugula in a large bowl. Add the tomatoes, onion, and half of the cheese. Toss the salad with enough vinaigrette to lightly coat it. Cut the steaks crosswise into thin slices. Arrange the steak slices on top of the salad and drizzle more vinaigrette over the steak. Sprinkle with the remaining cheese and serve. Serves 4.

    Don’t know but I’ll bet your dad has done a lot for you……no need to call him a kill joy just because he may want to fit in his speedos this summer. Once again stick to food.
