Oatmeal Chocolate Chip Cookies

I asked my daughter what she wanted to do today and she said bake cookies. I couldn’t say no! We got out our aprons, made a mess in the kitchen, and make some yummy cookies while Georgia was taking a nap. This recipe contains 2 cups of oatmeal so that’s gotta add some nutritional value right? We had fun and ate a lot of chocolate chips along the way. We had the idea of saving them for Nana and Poppi as they arrive tomorrow to visit. We’ll see if they last until tomorrow afternoon!

Oatmeal Chocolate Chip Cookies

Ingredients:

3/4 cup butter, softened

1 cup packed brown sugar

1/2 cup sugar

1 tsp. baking powder

1/4 tsp baking soda

pinch of salt

1/2 tsp. ground cinnamon

2 eggs

1 tsp. vanilla extract

1 1/2 cups flour

2 cups old fashioned oats

1 cup semi sweet chocolate chips

Directions: Preheat oven to 375 degrees. In a mixing bowl beat butter and sugars. Add  baking powder, baking soda, salt, and cinnamon. Beat until combined scraping down the sides. Beat in eggs ands vanilla. Beat in flour slowly. Stir in oats and chocolate chips.

Drop dough into rounded teaspoons onto an ungreased cookie sheet and bake for 8-9 minutes. The edges will be light brown. Let cool on a wire rack. Makes about 50 small cookies. I made about 3 dozen with my cookie scooper.
